Carbone Dolce
Served on Epiphany (January 6), carbone dolce looks like a lump of coal: dark, cracked, uneven, and unapologetically rough. To anyone unfamiliar with Italian folklore, it might seem like a culinary failure. In reality, it’s a dessert that values symbolism over beauty.
In Italian tradition, Epiphany marks the end of the Christmas season and commemorates the arrival of the Magi. Over time, this feast became intertwined with the folkloric figure of La Befana, an old woman who flies on a broom delivering gifts to children on the night of January 5.
According to legend, La Befana brings sweets to well-behaved children — and coal to those who misbehaved. But in a very Italian twist, even the coal is sweet. That coal is carbone dolce.
This dessert isn’t meant to look polished or elegant. Its cracked surface and irregular shape are intentional. Carbone dolce teaches an important lesson embedded in many Italian food traditions: ritual matters more than aesthetics, and meaning matters more than perfection.

Ingredients
1 large egg white
1 cup (200 g) granulated sugar
3/4 cup (100g) powdered sugar
1 tablespoon water
1 teaspoon lemon juice (or vodka)
Black food coloring (gel preferred)
Instructions
1. Prepare the Sugar Syrup
In a small saucepan, combine sugar in the water stirring until sugar dissolves and then cease stirring. Cook over medium heat without stirring until the syrup reaches 140–145°C (284–293°F) — the hard-crack stage.
Remove from heat immediately.
2. Whip the egg white
While the syrup cooks, whip the egg white until soft peaks form. Stir in black food dye and powdered sugar.
Do not overwhip — it should be foamy and flexible, not stiff or dry.
3. Combine Syrup
When syrup reaches hard crack stage, carefully remove from heat and quickly and steadily pour in the whipped egg white mixture. Stir thoroughly to combine well.
4. Shape the “Coal”
Turn the mixture out onto parchment paper.
Using a spatula or spoon, roughly mound and crack the surface. Do not smooth it — the jagged look is essential.
5. Cool and Break
Let cool completely at room temperature (about 30–40 minutes).
Once hardened, break into irregular chunks by hand.
Store in an airtight container at room temperature
Keeps well for 5–7 days
